My first cider. Straight up juice, yeast, and yeast nutrient. Used 5 cans of Safeway brand frozen concentrate, reconstituted.
Turned out pretty dry (FG is 1.000). If need be, I’ll add a crushed Campden tablet to the keg, wait 24 hours, and backsweeten with some fresh, pasteurized apple juice. Then, it’s on to carbonation (May 10, 2008).
Added a campden tablet (crushed) to the liquid, backsweetened with one small can of 100% apple juice, force carbonated, and bottled with my beer gun (May 23, 2008).
