General Info

Conversion of the Great Scot 80-/ extract version to all grain. Used Fuggles instead of Progress hops and added some brown sugar.

Comments

Racked to secondary and took a gravity reading. I have to say this is the most clear a beer has been after primary. Usually, there is a good bit of cloudiness - but with this one, I can read all the small writing on my submerged hydrometer. This yeast worked fast (October 1, 2006).

Racked to keg. Still very clear and, yes, a bit carbonated. The brown sugar doing its work, I guess. I will let it age a week and then force carbonate for my birthday party (October 7, 2006).

This one was the hit of the evening. No less than four people who regularly drink my beer said that this one was their hands-down favorite and the best I’ve brewed. It was served chilled but not too carbonated (I’d say around 1.5 CO2 saturation). This one is definately going to be part of my regular brewing schedule (October 15, 2006).

Mash Infusion

Step Description Temp. Time
Dough In Acclimate the grains. 152° F 5 min.
Mash Single infusion - stirring every 20 minutes 152° F 60 min.
Sparge 1st batch sparge with 2.0 gallons of water 168° F 15 min.
Sparge 2nd batch sparge with 2.0 gallons of water 168° F 15 min.

Procedure

  • Single infusion mash
  • Batch sparge with 4 gallons of 168 degree water
  • Boil 60 minutes, adding hops according to schedule
  • Cool wort to 75 degrees
  • Pitch yeast
