Comments

Second brew session on this day - this time for Izzy. Added brown sugar to the boil to increase gravity. Boosted it to 1.064 - not bad. Racked to primary and pitched yeast (February 18, 2007).

Mash Infusion

Step Description Temp. Time
Infusion Single infusion mash with 2.5 gallons of water. 154° F 60 min.
Sparge 1 First batch sparge with 2.0 gallons of water. 168° F 20 min.
Sparge 2 Second batch sparge with 2.0 gallons of water. 168° F 20 min.

Procedure

  • Single infusion mash.
  • Draw off 1 gallon of mixture and carmelize by boiling down to 1/2 gallon. Add to kettle.
  • Bring to boil.
  • Add hops and boil 60 minutes.
