Formulated to be similar to Anchor Libery Ale. Not strictly according to style - OG and ABV levels are below the BJCP guidelines.

Comments

Single infusion mash. Pitched yeast from my stash. Racked to primary and took OG reading. I’m a bit disappointed in the efficiency I achieved this time around. Next time, investigate options to boost efficiency - possibly a better base malt (April 21, 2007).

Racked to secondary and added dry hops (April 29, 2007).

Racked to keg and added 1/3 cup of corn sugar to prime. This one will be "natually" conditioned in the keg, a first for me. We’ll see how it goes. The hop aroma was very evident and, I must say, mouthwatering when I was racking to the keg. Took FG reading and set in the basement to condition cool for the next three to four weeks (May 9, 2007).

Notes for next time:

  • Increase the crystal malt to adjust color. Needs to be a bit more on the amber side and no soooo pale.
  • Increase bittering hop addition and dry hops.
  • Increase base malt and/or add Munich/Vienna for more body. Dextrin would also work.

Mash Infusion

Step Description Temp. Time
Dough In Acclimate grains. 154° F 5 min.
Infusion Single infusion mash, stirring every 20 minutes. 154° F 60 min.
Sparge 1st batch sparge with 2.0 gallons of water. 168° F 20 min.
Sparge 2nd batch sparge with 2.0 gallons of water. 168° F 20 min.

Procedure

  • Single infusion mash
  • Using a hop bag, add 1.75 ounces of Cascade hops
  • After 30 minutes, add 1.0 ounces of Cascades hops to the hop bag
  • After 45 minutes, add 1/4 tsp. of Super Irish Moss
  • After 60 minutes, remove from heat
  • Cool wort
  • Pitch yeast
  • In 1-2 weeks transfer wort to secondary and add a hop bag with the remaining Cascades (dry hop)
  • Condition cool for 3-6 weeks
