Strong Scotch Ale – All Grain


General Info

Derived from a recipe from Clone Brews for Smuttynose Scotch-Style Ale. Not really a Strong Scotch...more of a 90 shilling.


Very sluggish fermentation that could be due to two things I forgot: gypsum and 5.2 powder. One week since pitching and still not much in the way of bubbling in the airlock - once every 10 seconds or so (July 29, 2007).

Notes for next time:

  • Use 5.2 powder and gypsum.
  • Culture a 2000 ml starter at least two days in advance.
  • Use Irish Moss.
  • Don’t play Tripoly while brewing.

What appeared to be sluggish fermentation actually wasn’t. There was a lack of karausen, but otherwise the brew attenuated as normal (August 4, 2007).

  • Single infusion mash.
  • Batch sparge.
  • Bring to boil.
  • Add hops and boil 90 minutes.
