Procedure

  • Single infusion mash at 152° for 60 minutes.
  • Sparge
  • 60 minute boil
  • Add hops according to schedule
  • Rehydrate yeast and pitch into 50-55° wort
  • Ferment at 50-55° for at least 7 days
  • Raise temperature to 60° for diactyl rest
  • Slowly lower temperature over a few days to 40°
  • Lager at 40° for at least 5 weeks

Primary:
7 days @ 50° F
Secondary:
2 days @ 60° F
Lager:
35 days @ 40° F

Notes

This one was inspired by the description of the Imperial Pilsner in Extreme Brewing. It's an "Americanized" twist. This one is higher in alcohol and significantly higher in IBUs than your typical American Lager - no adjuncts either. All malt.
