Procedure

  • Do a cereal mash with 2 pounds of the two row and the grits at 153° for 20 minutes. Boil for 45 minutes. Add to the mash.
  • Single infusion mash at 149° for 60 minutes (3.6 gallons of water).
  • Sparge with 3.5 gallons of 170° water.
  • 60-70 minute boil

Notes

The last incarnation of this recipe was a bit high on the alcohol side, with a bit of fusels evident in the taste. This incarnation brings down the fermentables 10% to account for that.
