Procedure

  • Single infusion mash with 2.7 gallons of water @ 158° for 60 minutes.
  • Sparge with 170° water.
  • 90 minute boil.
  • Add hops according to schedule.
  • Cool wort and pitch yeast.

Notes

Switched to Edinburgh Ale (WLP028) based upon feedback at a brew club tasting. With it's low OG, there's no need to prepare a starter - simply pitch the vial.
